Concession stands and other kitchens produce thousands of orders per event throughout a concert venue. Phoenix Arena is no different. As oil and food scraps go into the trash and dishes get dumped in the sink after service, residual grease flows through the sink and into the pipes. With just days before their next concert, Phoenix Arena brought in Schrepple Construction and Jensen Infrastructure to install a 2500 gallon grease interceptor under the venue floor. At 6.75’W x 13’L x 7’H, the interceptor weighs 30,000 pounds and creates a rough delivery to enclosed spaces. The delivery team set and reset a boom truck inside the venue to be able to maneuver around the arena floor to complete the installation and make sure that the supply of food would not stop around the venue.
