Features & Benefits

How does a grease interceptor work?

A grease interceptor is a plumbing device designed to separate and capture fats, oils, grease and solids (FOGS) from wastewater before it reaches the municipal sewer system. As wastewater from kitchens or food prep areas enter the interceptor, it slows down, allowing lighter grease and oils to float to the top while heavier solids settle at the bottom. The cleaner water in the middle then exits the tank and continues into the sewer system.

What is the purpose of a grease interceptor?

The primary purpose of a grease interceptor is to prevent fats, oils, grease, and solids from entering the public sewer system. These substances can harden and accumulate within pipes, leading to clogs, backups and increased maintenance costs.

How do I determine the size of grease interceptor needed for my facility?

The appropriate size of a grease interceptor depends on several key factors, including the type of facility, the number and size of kitchen fixtures, wastewater flow rate, and local plumbing or health department requirements. To properly size a unit, you will need to consider the following:

  • Flow rate (GPM) of sinks, dishwashers, and other connected equipment
  • Daily volume of wastewater generated
  • Type of food service (e.g., fast food, full-service, prep kitchen)
  • Retention time required for grease separation
  • Applicable codes and standards in your area

Jensen Infrastructure offers grease interceptors in a range of capacities and configurations to meet both standard and customized requirements. We recommend consulting with a licensed engineer or plumber or reaching out to our team for assistance with sizing and selection to ensure compliance and optimal performance.
